CANDY APPLES 
2 cups sugar
1 cup water
1/4 tsp. cream of tartar
red food coloring
candy thermometer
apples
skewers or Popsicle sticks

In a medium saucepan, combine all ingredients. Heat on high setting, using a candy thermometer positioned in the center of of the liquid (clipped to the side).

While it heats up, wash and dry the apples and insert the skewers. Boil the mixture until it reaches the hard crack stage (300-310°F), add red food coloring and stir. Immediately dip the apples and set them on a greased cookie sheet.

Each batch candies approximately 1 dozen medium apples.

Cooks Note: Use of a candy thermometer is recommended.
