NEW ORLEANS RED BEANS AND RICE | |
1 lb. kidney beans, dried Salt to taste 1 clove garlic, chopped 1 med. onion, finely chopped 24 inches polish sausage, browned and cut 3 bay leaves 4 pieces ham hock 6 - 7 c. water 3 stalks celery, chopped Rice Wash beans and in a pot with salt, boil until done. In a skillet, saute garlic, onion and celery. Add to beans after beans are cooked. Add browned sausage, bay leaves and ham hock. Put all ingredients in crock pot with 6 cups water; cover and cook on low for 2 to 2 1/2 hours. serve over rice. Makes 6 servings. |
