“LEMON SQUARES” IS IN:

LEMON SQUARES 
1 cup all purpose flour
1 pkg True Lemon (optional)
1/2 cup unsalted butter
1/4 cup confectioners sugar
2 eggs, room temperature
1 cup sugar
1 teaspoon baking powder
3 tablespoons fresh lemon juice and grated rind

Preheat oven to 350°F. Combine flour, (True Lemon, if using), butter and confectioners sugar until they have the consistency of cornmeal. Press the mixture evenly into the bottom of an ungreased 8 inch square baking pan.

Bake at 350°F for 20 minutes, or until lightly golden.

While the crust is baking, beat eggs, gradually adding sugar until lemony colored. Add lemon juice, baking powder and the finely grated lemon rind, mixing well.

When crust is done, remove from oven; pour lemon mixture over it evenly and return it to the oven. Continue to bake for another 25 minutes or longer - when your finger makes no imprint, it's done.

The lemon squares must set. Allow to cool completely before cutting. While still in the pan, cut into 16 squares.

Refrigerate before serving.

This recipe didn't turn out too well. I followed the recipe exactly only i didn't use lemon rind and I had to use a 8 inch round cake pan. The crust taste like flour and the lemon mixture is kinda sticky and hard to cut. Not sure what i did wrong.

It sounds like your lemon squares were uncooked. If the recipe did not specify that you should remove the lemon squares while still raw, then you should have baked until done. Did you preheat the oven? If you didn't preheat the oven, it would have taken more time than 20 minutes to finish baking. You have to preheat the oven for 15 minutes, or bring it up to temperature, before starting to bake.

I have my printed copy of this original recipe LEMON SQUARES Printed from COOKS.COM dated 12.2 2008. It's my favorite recipe, favorite Lemon Square Recipe. 5 plus stars!
I only use an "8-inch non-stick square baking pan".
It is great pan and I cover with Aluminum Foil, making mess free. 99.9% Success. This is easy to make. Result is delicious and guest pleaser.
