1 c. flour 1/2 c. butter 1/4 c. confectioners sugar 2 eggs 1 c. granulated sugar 1/2 tsp. baking powder 1/4 tsp. salt 2 tbsp. freshly squeezed lemon juice Combine flour, butter and confectioners sugar until they reach the consistency of fine crumbs. Press evenly into a greased 9 by 9 inch square pan. Bake about 20 minutes in a 350°F oven. Beat the remaining ingredients until light and fluffy. Pour over crust and bake an additional 25 minutes. Amazing taste and simple to make! My only advice is if you aren't into sweets I'd only do half the amount of icing sugar (confectioners sugar). I will also be trying a touch more lemon juice and some lemon rind just for fun :O)
