8 BEAN SOUP 
1/4 c. pinto beans
1/4 c. navy beans
1/4 c. kidney beans
1/4 c. lg. lima beans
1/4 c. sm. lima beans
1/4 c. black-eyed peas
1/4 c. split peas
1/4 c. lentils
Ham bone or ham hock
1 qt. tomatoes
1/2 to 1 tsp. chili powder
1/2 tsp. hot sauce (or more)
1 tsp. lg. onion, chopped
1 tsp. lemon juice
1/2 tsp. pepper
1 tsp. sugar
1/4 c. rice or barley (optional)

Wash beans. Place in big kettle, cover with water, 2 inches above beans. Soak overnight, drain in morning. Add 2 quarts water and ham. Bring to boil, reduce heat, simmer 2 hours, stirring occasionally. Add rest of ingredients. Simmer slowly 1 or more hours.
