SUMMER SQUASH CASSEROLE 
3 c. cooked yellow squash, drained
1 sm. onion, chopped & sauteed
1 egg, beaten lightly
1/4 c. mayonnaise
1/2 c. sour cream
1 c. Cheddar cheese, shredded
1/2 c. cracker crumbs

Reserving 1/4 cup cheese for the top, mix all other ingredients in casserole dish (1 1/2 to 1 3/4 quart). Top with remaining cheese and bake at 350 degrees for 30 minutes.
