CRANBERRY-ORANGE MUFFINS 
2 c. flour
3/4 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1/3 c. oil
1 egg, beaten
1 tsp. grated orange rind (opt.)
1/2 c. orange juice
1 c. chopped cranberries
1/4 c. chopped walnuts

Grease muffin tins. Mix flour, sugar, baking powder and salt in a bowl. In a small bowl, beat egg, oil, orange juice and rind. Mix together. Add cranberries and nuts. Bake at 400 degrees for 20 minutes. Makes a dozen. (I freeze cranberries for the winter, then I cut them in halves and shake the seeds out before cooking.)

Excellent recipe. Followed recipe exactly as writen, but added a little confectioners sugar/orange juice glaze to the top while warm. My DH was under the weather when I asked him to try them and he said, "I'm sick and these even taste good!" Definitely a keeper for our home. Thanks for sharing!

I had a craving for something with cranberries last night so I made up a batch of these muffins. The only problem was when I went to assemble everything the mixture was quite dry, so I added some water to make it more muffin batter-esque. These were absolutely delicious and all four of us enjoyed these :)

Batter seemed more like cookie dough. I had to modify it by adding some milk to make it more like a batter. I also used more nuts and added a little cinnamon. Taste was good.

Great muffins! I used 2 eggs, added 1 tsp. vanilla extract, and replaced 1/2 c. of the flour with 1/2 c. quick oats.

I made these with the juice and pulp from fresh blood oranges, fresh cranberries from Cape Cod and substituted coconut oil. They are beyond amazing!!!! They were so easy to prepare as well. I had the kids help.

I make these all the time. Today instead of making muffins, I made bread. It came out really well. Because I use half Splenda and half sugar, I use 2 eggs instead of 1. I also doubled the walnuts because I like a lot of nuts in my breads and muffins. This is one of my favorite recipes!
