ANNIE'S CRANBERRY-ORANGE RUM
MUFFINS
 
3 c. flour
1 c. sugar
3 tsp. baking powder
1 tsp. salt
1 tsp. ginger
1 tsp. cloves
3/4 c. milk
4 tbsp. oil
2 eggs, beaten
1/2 c. grated apple peel
1/4 c. grated orange peel
1/2 c. whole cranberry sauce
1/4 c. fresh orange juice
1/4 c. rum

Sift together flour, sugar, baking powder, salt, ginger and cloves into a large mixing bowl. In another bowl mix together milk, oil, eggs, peels, cranberry sauce, orange juice and rum; add to dry ingredients. If batter is too thin, add a little more flour until it is the consistency of cake batter. Half fill muffin tins and bake in 350 degree oven until muffins test done.
