QUICK ZUCCHINI/SQUASH CASSEROLE 
1/4 c. butter
1 clove minced garlic
1 tsp. oregano leaves
1/2 tsp. basil leaves
1/2 tsp. salt
1/8 tsp. pepper
2 med. zucchini, thinly sliced
1 med. yellow summer squash, thinly sliced
1 lg. tomato, cut 8 wedges
1/4 c. grated Parmesan cheese (or to taste)

Put butter and garlic in casserole (2 quart). Microwave on high until melted (1 - 1 1/2 minutes). Mix in oregano, salt and pepper. Add remaining ingredients except tomato and Parmesan. Toss to coat, cover. Microwave on high until tender (8-10 minutes) stirring halfway through. Stir in tomato and Parmesan. Cover and let stand 2 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
