HAM AND BLACK-EYED PEA SOUP 
1 pkg. dried black-eyed peas
3 cans of chicken broth
1-1/2 c. water
1 c. reduced sodium ham, chopped
4 carrots, cut any way you like
2 stalks celery, chopped
1/4 c. onion, minced
1 tsp. sage
1 tsp. thyme
1/4 tsp. cayenne
1 tbsp. lemon juice

Cook peas in broth and water. When half cooked add seasonings, veggies and ham. Right before serving, stir in lemon juice. Can be frozen.

Makes 6 main-dish servings. Good on a cold, rainy day!
