RED BEANS AND RICE 
1 lb. smoked link sausage, cut into 1/2" slices
1 med. onion, chopped
1 green pepper, chopped
1 clove garlic, minced
2 (15 oz.) cans kidney beans, drained
) can tomatoes, undrained but chopped
1/2 tsp. dried whole oregano
1/2 tsp. pepper
Hot cooked rice (1 1/2 c. uncooked long grain rice or 3 c. cooked)

Cook sausage over low heat for 5 to 8 minutes. Add onions, green pepper and garlic; saute until tender. Drain if necessary. Add beans, tomatoes and seasonings. Simmer, uncovered for 2 minutes. Serve over rice. Yield: 4 to 6 large servings.
