NANA'S (MY MOM'S) YUGOSLAVIAN SAHTRASHE | |
6 slices bacon 2 lg. onions, quartered vertically, then horizontally 2 green peppers, sliced vertically in 3/4" slices, then horizontally 4 med. size fresh tomatoes, cut in eighths 1 sm. can tomato sauce plus 3/4 can water Salt to taste In skillet, fry bacon to preferred crispness. Remove. Add green peppers to bacon drippings in skillet. Cover with lid and saute 2 minutes over medium heat. Add onions, cover with lid and saute 4 minutes (stir once or twice). Lower heat, add tomatoes and salt. Cover with lid and simmer 4 minutes or until tomatoes are done. Add tomato sauce and water. Increase heat to medium. Bring to a boil and mix, then remove from heat immediately. Serve this over mashed potatoes (or cooked rice) and top with bacon. The bacon can be substituted with frankfurters, about 3, cut in slices, and fried in little oil or shortening. Remove from pan. Wipe pan with paper towel and place 2 full tablespoons shortening in pan. Then follow above recipe. One small can of whole tomatoes can be substituted for fresh tomatoes. Cut tomatoes into pieces and add to the ingredients as the fresh tomatoes. Add 1/2 can of water to the juice of the canned tomatoes and continue as recipe. |
