FRIED POTATO CAKES 
2 c. leftover mashed potatoes
1 egg, beaten
1/4 c. flour

Stir beaten egg and flour into potatoes. Form into patties. Dip both sides into additional flour and brown in a little shortening. A good variation is to add some chopped or ground ham to the mixture. Makes 4-8 servings.

Use the original recipe and put aside. Then make a Mexican salsa mild to hot, add 1/2 teaspoon of sugar (important), add green olives and capers, mix, heat till allmost boiling, pour over hot potato cakes and enjoy.

Mercy this was GOOD!! Great recipe! Think I will make 8 smaller and flatter ones rather than 4 big, thick ones next time so I can get more of the outer crust taste.
