MINI BLUEBERRY CHEESECAKE 
2 (8oz) cream cheese, softened
2 eggs
1 cup sugar
1 tsp. vanilla extract
Nilla wafer crackers
blueberry or strawberry filling
cupcake liners

Mix cream cheese, sugar, one egg, and vanilla extract, until smooth. Then, add second egg.

Place one Nilla cracker in each cupcake liner. Pour 1-2 tablespoons batter into each liner.

Bake for 20 minutes at 300°F. Refrigerate for 2 hours or over night then add blueberry or strawberry filling on top. Makes 15 cupcakes.

I love this recipe-it is so simple. My mom made these for years. I substituted Philadelphia brand Neufchatel (1/3 less fat) and used low fat nila wafers to make them more healthy. My mom always used blueberry, cherry and pineapple pie filling. I could not find pineapple so I substituted peach pie filling. What I love about it, is that this is the perfect size dessert after a BBQ.
