MOM'S VEGETABLE QUICHE 
6 eggs
1 c. semi-cooked chopped broccoli (or spinach)
1 c. chopped mushrooms
1/2 c. chopped green onions
1 c. grated Cheddar cheese (or Swiss if using spinach)
2 tbsp. flour
1/2 c. milk
Salt & pepper
1 9" pie shell

Beat eggs well. Stir in vegetables, mixing well. In separate bowl mix cheese with flour and add to vegetable mixture. Add milk last and mix well. Pour into pie crust. Bake at 350 degrees for 1 hour. To test insert knife. If it comes out clean, quiche is done.

Made this at a friends house, added 1/2 cup red pepper used frozen chopped spinach, green onions, and added a little white onion with swiss cheese in a frozen but thawed for an hour pie shell. It was really good!!

I made my first quiche using this recipe and it was a great success. I love making two quiches at once and freezing the second for a quick brunch on a later date. Also, I have used egg whites and low sodium cheese for a healthier option. Have fun with this recipe by trying different veggies.

Have made this three times or so, all with good results! Have substituted feta, asparagus, chopped green beans, and all turned out ok.
