VEGETABLE MEDLEY QUICHE 
Makes 8 servings

1 sm. zucchini, sliced (about 1 cup)
1 sm. green pepper, cut in strips (about 3/4 cup)
1 sm. red pepper, cut in strips (about 3/4 cup)
1 tsp. FLEISCHMANN'S butter
1 (9 inch) pastry crust
1 (8 oz.) carton EGG BEATERS 99% Real egg product
1 c. skim milk
1/4 tsp. basil leaves
1/8 tsp. ground black pepper

In skillet, over medium heat, cook zucchini, green pepper and red pepper in butter until tender crisp, stirring occasionally. Spoon mixture into pastry crust. Mix Egg Beaters, skim milk, basil and pepper; pour over vegetables. Bake at 375 degrees for 50 to 55 minutes or until knife inserted in center comes out clean. Let stand 10 minutes before serving.
