BLUEBERRY TARTS 
2 tbsp. butter
1 graham cracker square (2"), crushed
2 tbsp. water
1 tbsp. cornstarch
4 packets (4 grams) Equal Tabletop Sweetener
1/4 tsp. cinnamon
1 tbsp. lemon juice
1 pt. unsweetened blueberries, fresh or frozen

Put butter in a small glass bowl and melt it in the microwave (high setting for 1 minute). Add crumbs and toss. Put crumb mixture into the bottoms of 3 custard cups. Put the cups in the microwave, high setting, for 1 1/2 minutes, or until set. Put aside.

Combine all remaining ingredients, except blueberries, in a medium glass bowl. Add blueberries and toss to coat. Microwave on high setting for 6 minutes, or until mixture thickens, stirring every 1 1/2 minutes. Cool. Spoon blueberries into the custard cups. Cover and chill before serving. Top with a tablespoon of non-dairy whipped topping. Servings: 3.

Since microwave ovens vary in power, you may need to adjust your cooking time.
