BEST EVER GERMAN POTATO SALAD 
This potato salad is very delicious!

6 slices bacon
2 tbsp. all-purpose flour
2 tsp. salt
1/8 tsp. pepper
1/3 c. sugar
1 egg
1/4 c. cider vinegar
1 c. water
1/4 c. lemon juice
6 to 8 medium cooked potatoes, sliced
1/2 c. onion, sliced
1/4 c. parsley, minced
1 tsp. celery seed

Fry bacon until delicately brown. Add flour, salt, pepper and sugar to pan and blend well. Beat egg slightly, add vinegar, water and lemon juice. Add gradually to mixture in the skillet and stir and cook until thickened. Pour over sliced potatoes, sliced onions. Add parsley and celery seed. Toss lightly. Garnish with lettuce, tomato wedges and cucumber slices, if desired.

Well named! While more involved than the generations old family recipe I used to use this is much tastier.

I follow the ingredients to a tee. However I modify the preparation as I normally serve this as part of a fish fry (crappie fillets), must prepare it ahead of time and serve very well warmed, but not truly hot, the way everyone likes it.

I cook the bacon in the microwave and then prepare the dressing in the top of a double boiler (directly on the stove) adding about a tablespoon of additional bacon drippings to account for what was soaked up by the paper toweling. Then I pour the dressing over the potatoes/onions, mix, return to the double boiler and keep it warm over simmering water. A Farberware double boiler is the perfect size.
