EXTRA LEAN TURKEY MEATLOAF 
Makes great sandwiches the next day on a French roll with extra barbecue sauce.

1-2 (1 lb. ea.) pkgs. extra lean ground turkey
2 eggs
barbecue sauce (your choice)
1/2 cup chopped green bell pepper
1/2 cup chopped onion
1/2 cup sliced fresh mushrooms
bread crumbs

Combine meat, eggs and barbecue sauce to your liking. Mix well. It's easiest to do with your very own hands! Add peppers, onions and mushrooms - some like less some may like more!

Slowly add bread crumbs to thicken the loaf. Be careful - adding too much will mean you'll need to add more egg and barbecue sauce.

Bake at 350°F until thoroughly cooked, usually about 45 minutes. But keep an eye on it as it is extra lean so it cooks faster and will dry up.

I cooked this for my football buds to eat on during the game. It was a HIT. The only thing I changed was used a can of cream of mushroom soup instead of mushrooms.

I cooked the meatloaf for ninety minutes. It is moist and delicious. I used Stubb's barbecue sauce and mixed the barbecue sauce in the loaf before cooking. Also, I used a blender to chop the onion and green pepper.
