FLAKY BISCUITS 
3 c. flour
2 1/2 tbsp. sugar
4 1/2 tsp. baking powder
3/4 tsp. salt
3/4 tsp. cream of tartar
3/4 c. butter
3/4 c. milk
1 egg, lightly beaten

Sift together flour, sugar, baking powder, salt and cream of tartar. Add butter. With a fork or pastry blender, blend mixture until it resembles coarse meal, then stir in egg and milk.

Turn dough on a lightly floured surface; knead lightly for 4 or 5 strokes. Roll or pat into a 1/2 thick round. Cut with 2 inch biscuit cutter or glass turned upside down.

Place on baking sheet and bake at 425°F about 8-10 minutes.
