“EBBIE'S CRUMBLY BLUEBERRY BARS” IS IN:

EBBIE'S CRUMBLY BLUEBERRY BARS 
3 cups all-purpose flour
1 1/2 cups sugar
1 tsp. baking powder
3 tsp. cornstarch
1/4 tsp. salt
1 pinch ground cinnamon
1 egg
1 cup shortening (I use the butter flavored Crisco sticks)
4 cups fresh blueberries (I sometimes use dark cherries)

Preheat oven to 375°F. Grease a 9x13-inch pan

In a bowl mix the blueberries, 1/2 cup of sugar and cornstarch; set aside.

In a separate bowl mix the flour, 1 cup sugar, baking powder, salt and cinnamon. Use a fork or pastry cutter to blend in egg and shortening. (the dough should be a crumbly texture)

Take half of the dough and press firmly into greased 9x13-inch pan. Sprinkle blueberry mixture evenly on top of dough. Crumble remaining dough evenly on top of blueberries.

Bake at 375°F for 45 minutes or until the top is slightly golden brown.

Cool completely before cutting into bars (or it will be a bit runny). Enjoy!!

Ebbie's Crumbly Chocolate Chip Bars:

To make chocolate chip bars, follow the same recipe, except substitute the following: 1 cup brown sugar instead of regular sugar, 1 teaspoon of vanilla instead of cinnamon and 1 (12 oz.) bag of "Hershey's Dark Chocolate Chips" for blueberries.

The blueberry bars were wonderful! I am making them again. I am also going to try the chocolate version, however, I am going to try them with Heath chips instead of chocolate.
