SPINACH MUSHROOM QUICHE 
1 frozen deep dish pie crust
1 tbsp. Dijon mustard
2 pkg. frozen spinach, chopped
1 fresh garlic clove, chopped
1 tbsp. olive oil
1 c. shredded cheddar cheese
1/2 c. sliced fresh mushrooms
1 chopped shallot or med. onion
1/2 c. whipping cream
3 eggs
Fresh ground pepper
Seasoning salt
Grated Parmesan cheese
Paprika

Spread inside pie crust with mustard. Cook spinach; drain well. Saute garlic, shallots and mushrooms until tender in olive oil. Stir in spinach and cheese. Pour into pie shell. Mix eggs, whipping cream and seasonings well. Pour over quiche. Get liquid down in spinach. Sprinkle top with paprika and Parmesan.

Bake in center of oven at 375°F for about 35 minutes, until crust is brown.

Serves 6 or 8.

I always look for recipes that work within my pantry.. This one came close. I substituted canned condensed milk for the half of cup of whipping cream. I used an "on sale" brand of mixed cheeses instead of cheddar and I added a bit of cayenne to add interest. I do have to admit that I added nutmeg and topped it with good cheese and paprika as you said. Oh.. By the way I used a generic deep dish pie shell but it took 10 minutes longer to cook in my oven, everyone loved it!!! Thanks for the idea

Fabulous! Used Gruyere and shredded Swiss and fresh bagged spinach... Also shredded Parmesan .... The Dijon was a nice addition. S

Simple easy and delicious! I love this recipe. I substituted almond milk for the heavy cream since I didn't have any! Came out just wonderful! I think I'll add some more cheese in my next one but that's just because I love it! It came out great with this recipe!

This is very good. I added a pinch of nutmeg to the egg mixture to enhance the spinach. Also, i forgot to get a "deep dish pie crust" and ended up using (2) 9 inch pie crusts. Also, there was a little bit too much spinach for my tastes. I would only use 1 package next time. I actually used double the amount of mushrooms and still couldn't even tell they were in there. Next time i will use the entire 8 oz package of mushrooms.
