OLD-TIME SUGAR COOKIES 
3 cups sifted flour
2 teaspoons baking powder
1/2 teaspoons salt
1 cup butter
1 1/2 cups sugar
2 large eggs, or 4 egg yolks
1 tablespoon milk
1 teaspoon vanilla extract or grated lemon rind
2 tablespoons sugar
1 or 2 teaspoons cinnamon

Sift 1 1/2 cups of flour with baking powder and salt onto a sheet of wax paper and set aside.

Beat butter until light and creamy, gradually adding sugar. Beat in the eggs or egg yolks, one at a time, beating well after each addition. Add milk and vanilla or lemon rind.

With mixer on lowest speed, gradually add the sifted flour mixture and enough of the remaining 1 1/2 cups flour to make a workable dough, but not too much (the less the better).

Chill the dough for 1 hour or for up to 24 hours.

Stir together 2 tablespoons sugar and 1 or 2 teaspoons cinnamon. When the dough is chilled roll and cut into shapes, and sprinkle with the cinnamon sugar.

Place on parchment paper lined cookie sheets and bake in a preheated 400°F oven for 9 or 10 minutes or until cookies are lightly golden.

To make a crackled sugar cookie, roll the dough into small balls, then roll in the sugar cinnamon mixture.

Bake as directed.
