“OLD-TIME SUGAR COOKIES” IS IN:

OLD-TIME SUGAR COOKIES 
3 cups sifted all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup (2 sticks) butter or shortening
1 1/2 cups sugar
2 large eggs, or 4 egg yolks
1 tablespoon milk
1 teaspoon vanilla
2 tablespoons sugar (for sprinkling)
1 or 2 teaspoons cinnamon

Sift half of the flour with the baking powder and salt. Set aside.

Cream together butter or shortening until light, gradually adding sugar; beat until fluffy. On medium low speed, beat in eggs, milk, and vanilla. Stir in flour/baking powder mixture.

Add enough of the remaining 1 1/2 cups flour to make a smooth dough that is not too stiff. Do not add too much flour or the cookies will be heavy.

Chill dough for 1 hour or more.

Combine 2 tablespoons sugar with the cinnamon.

After dough is thoroughly chilled, roll out and cut into shapes using cookies cutters dipped in flour.

Sprinkle with the sugar-cinnamon mixture.

Arrange 1-inch apart on ungreased cookie sheets and bake in a preheated 400°F. oven for 9 or10 minutes, watching carefully near the end of baking.

To make crackly cookies, roll the dough into small balls, then roll evenly in the sugar-cinnamon mixture.

Bake as directed above.

Pure almond extract or grated lemon or orange peel may be used to flavor the cookies as a substitute for the vanilla. Flavored liqueurs, rum and whisky also make for flavorful variations.

Ok... So I know I'm a little late getting back to my original comment (I forgot to bookmark this page). Well, the cookies were good but I think a lot more flour is needed to keep the cookies pliable enough to roll and cut with cookie cutters, otherwise it ends up being very soft and not at all easy to manage (I think because of the shortening which I would not dare omit or alter). I was trying to achieve very thin, crispy cookie in Christmas shapes. I'm trying it again today but I'll definitely use more flour this time!

You should chill overnight. It helps to roll between 2 sheets of parchment or wax paper

I tried the crackly version of this. They turned out so well! One of the best cookies I have ever made. I did use all 3 cups of flour to get the consistency I needed. I also used butter and not shortening. I am curious to try them with the shortening, though. The cookies were soft and delicious and stayed fresh for days. My cookie snob of a husband was very impressed with these, too.

It was the most successful sugar cookie dough I have ever made, rolled, cut out and baked! I needed something fast, and it was! So neat in the roll/cut out department that it was very efficient! (I did use the whole amount of flour).

The kids were going to help by doing the cutting, but couldn't stand the excitement. So we rolled it out on a pizza pan and made one large cookie. A little thicker, and added one egg, turned out great. One of the best sugar cookies I've had.

Great Cookies!

Me and mom made these for my dad and brother and we all loved them. We however didn't let the dough chill or any of that... we simple mixed all the ingredients at once and them rolled them out and made Christmas shapes! EASY as PIE! (or cookies) They tasted AMAZING!

I've been making these cookies every Christmas for the last 4 years as Christmas gifts. I usually make other types of cookies too but this is the only cookie that my friends and family truly want. It's a keeper, especially since i just spent 20 minutes googling for the recipe since i lost my paper copy. Definitely a good recipe!

Divide the dough into 4 equal parts. Using food coloring, make blue, green, yellow and red dough. Roll into 1-inch balls combining all 4 colors and then roll the balls in rainbow nonpareils. Bake about 9 minutes or so. They will be the prettiest cookies you'll ever make. A great project with the grandkids!
