PEANUT BUTTER COOKIES | |
1 1/2 c. sifted flour 1/4 tsp. salt 1/2 tsp. baking soda 1 tsp. cinnamon 1/4 c. shortening 1 c. sugar 1/2 c. peanut butter 2 eggs, well beaten 1/4 c. milk 1 tsp. vanilla 3/4 c. seedless raisins 3/4 c. rolled oats And sift together the salt, baking soda, cinnamon and set aside. Beat the shortening until creamy, adding the sugar slowly. Stir in peanut butter and blend well. Add the eggs, milk, and vanilla and mix well. Add sifted dry ingredients. Fold in raisins and oats. Chill the dough for one hour in refrigerator. Preheat your oven to 350°F. Drop dough by teaspoonfuls onto greased sheets, 2 inches apart. Bake 15 minutes or until lightly browned on edges.
