DOUBLE CHOCOLATE PEANUT BUTTER COOKIES | |
1 cup butter 1 cup granulated sugar 1/2 cup brown sugar, packed 2 eggs 1 tsp. pure vanilla 2 cups all purpose flour 1/2 cup cocoa powder 1 tsp. baking soda 1/4 tsp. salt 1 cup semi-sweet chocolate chips 1 cup peanut butter chips or butterscotch chips 1/2 cup chopped Macadamia nuts Preheat oven to 350°F for 15 minutes before baking. Yield: 48 cookies, 1 per serving.Grease or line cookie sheets with parchment paper. In a large bowl, beat together butter and both sugars until light and fluffy. Beat in eggs, one at a time, beating well after each addition. Stir in vanilla. In another bowl, combine flour, cocoa, baking soda and salt, stirring until no streaks remain. Stir gradually into butter mixture. Add chocolate chips and peanut butter chips (white chocolate can also be used, or use 2 cups semi-sweet chocolate chips or chunks). Stir in nuts (Macadamia nuts are wonderful with white chocolate, but any type of nut may be used). Stir and drop by teaspoonfuls onto prepared cookie sheets. Bake in preheated oven for 10-12 minutes or until done. Nutrition (per serving - made with butterscotch chips): 90 calories, 22 calories from fat, 2.6g total fat, 9.1mg cholesterol, 44.2mg sodium, 30.4mg potassium, 16.7g carbohydrates, less than 1g fiber, 6.5g sugar, 1.2g protein. |
