JELLO RHUBARB CAKE 
1 pkg. white or yellow cake mix
1 c. sugar
4 c. rhubarb, cut fine
1 pkg. red Jello
1/2 c. sugar
1/4 c. flour
1/4 c. butter

Mix cake mix according to directions on package. Pour into a greased and floured 9"x13" pan. Mix rhubarb, 1 cup sugar and Jello. Spoon on top of cake mix. Then mix 1/2 cup sugar, flour and butter until crumbly. Put this over top of cake. Bake in 350 degree oven for 35 to 40 minutes.

I like to make this cake but always flip it over after baking (like a pineapple upside down cake). All the pretty red rhubarb mixture settles to the bottom when it bakes and is quite eye appealing when it's on the top! This is a simple tasty cake. I serve it warm and with ice cream or whipped cream. Yum yum!
