FARMER'S CASSEROLE: BOLOGNA,
HAM, CHICKEN OR GROUND BEEF
 
Farmer's Casserole:

3 cups frozen hash browns or French fries
3/4 cup to 8 oz. shredded cheese (or even cubed Velveeta will work too!)
1 cup cubed bologna, leftover cubed chicken, ham or 1 pound cooked drained ground meat
1 to 2 (15 oz. ea.) cans corn, great northern beans, green beans, mixed vegetables or any combination that are drained or equivalent leftover veggies you might want to use (I have even used frozen chopped broccoli)
1/4 cup onion, well chopped (2-3 tbsp. minced dried onions works too!)
4 beaten eggs
1 (12 oz.) can evaporated milk
1/2 tsp. garlic and/or onion powder (chili powder or any spice you may like or have)
1/4 tsp. black pepper
1/2 tsp. salt (omit if using garlic or onion salt)

Grease 2-quart rectangular baking dish with cooking spray or use disposable aluminum pan. Arrange potatoes evenly on bottom of baking dish. Sprinkle with cheese over the top of meats, vegetables and onions. Combine milk and eggs and seasonings. Pour over potatoes and cheese.

For best results, refrigerate overnight to allow flavors to meld together.

Bake at 350°F for 50 minutes until set and egg mixture is fully cooked. Let rest 10 minutes prior to serving.
