“BLACK BEAN AND CORN SALSA” IS IN:
NEXT RECIPE:  BREAKFAST CASSEROLE

BLACK BEAN AND CORN SALSA 
1 (15 oz.) can black beans, rinsed and drained
1 (11 oz.) can whole kernel corn, drained
1 tsp. minced fresh jalapeno pepper
1 avocado, chopped
2 medium tomatoes, chopped
1 red bell pepper, chopped
1/3 cup chopped fresh cilantro (or sub. 1 tsp. dried cilantro)
1/4 cup diced red onion
1/4 cup fresh lime juice (about 2 limes, squeezed)
1 tsp. salt
tortilla chips for dipping

Combine all ingredients except avocado and chips. Cover and chill for at least two hours. Add avocado just before serving. Serve with chips.

This salsa is the best! This was my first year growing cilantro, and I had some black beans in the kitchen, so I was itching to find something to add the two together. This was amazing! I will definately be making more of this, and always grow cilantro from now on!

Great salsa recipe. I have served this salsa many times and always get rave reviews. One hint to try, instead of using fresh tomatos (especially in winter), use a can of diced tomatos with green chilli peppers (drained) as a substitute. Adds another kick to the taste.

Tried a different recipe years ago and never made corn and bean salsa again because it was not good. I tried this one and we LOVE it. I also added a well seeded and deveined jalapeno . This is a great appetizer served on chips or a main course salad. My husband is a vegan so it is perfect. Thank you

This is great on Tilapia. Reminded me of the Applebees blackbean corn relish on fish so I tried it. I have crusted the Tilapia with Tostitos to add more of a Mexican flair.

Hi, this is my first post, and I just got done making, but I forgot the tomatoes so I will take back out and add, but I will eat tomorrow, it is always good overnight, Oh God I thank you for reminding about the tomato, I put bean, green pepper, scallions, cumin, corn, cilantro, lime, and of course I had to use some chopped up garlic, love garlic. I thank you again, for reminding me of the tomato, I new there was something missing, but you reminded me of. Oh an avocado will have tomorrow also. Debbie
