NO FLOUR PEANUT BUTTER COOKIES 
1 cup smooth peanut butter
1 cup granulated sugar
1 whole egg

Believe it or not, this is all it takes. Don't add anything else!

These have the same taste as those chocolate covered peanut butter candies from Reeses!

In a medium bowl with a wooden spoon, beat peanut butter until it becomes slightly creamier. Add sugar and mix well. Finally, add the whole egg and mix.

When well blended, drop by spoonfuls onto a greased cookie sheet or spray with cooking spray to prevent from sticking. Press the tines of a fork or a potato masher on top of the cookies to flatten slightly.

Bake at 350°F degrees for about 12-15 minutes or until you see them golden brown at the bottom.

Makes about 12 cookies. You can double the recipe.

If you modify this recipe a little bit it is amazing! Use 1/2 cup brown sugar and 1/4 cup white sugar in place of the one cup and add a teaspoon of vanilla. They are good the original way too but this is just a little added plus.

I used honey instead of sugar, I just prefer the taste and health of it. I also added the tsp of vanilla as used by other gals. I am so happy I could find a recipe for something yummy when I have very little in my kitchen. They came out AWESOME!!! I made another batch with whole oats and WOW!! good too!! ***if you do use honey in replace of sugar 2/3 cup of honey to 1 cup of sugar.

I've used this recipe many times and LOVED it! This time I substituted Splenda for the sugar. I didn't like the consistency. There was an almost powdery/dry quality to it. I'll stick with the regular recipe using real sugar from now on.

Just made these for my dad for Father's Day! He loved them. (I'm supposed to make them weekly) I'm sure it's nice to have a treat with his no sugar no flour diet. Just switched the sugar to 1/2 cup of Splenda. I think it helped with the said dryness. Great recipe! Thanks!
