TOMATO PIE | |
4 tomatoes, peeled and sliced 10 chopped fresh basil leaves 1 c. mayonnaise 1/2 to 1 c. chopped green onions 1 c. grated or shredded Cheddar Cheese 1 c. Mozzarella cheese 1 BAKED deep dish pie shell Place tomato slices in colander, salt to taste, and drain for 10 minutes. Place tomato slices, basil, and onions in baked pie shell. Sprinkle with salt, pepper, and garlic powder to taste. Mix mayo and cheese together in a bowl. Spread on top of tomato mixture, like a meringue. bake 45 minutes at 350°F. Serve warm, can be reheated as individual slices in microwave for about 15 seconds. This is sort of like a quiche. |
