PEANUT BUTTER COOKIES
(FLOURLESS)
 
1 cup creamy peanut butter
1 cup white sugar
1 egg

Mix together egg, sugar and peanut butter. Roll into balls, whatever size you want.

Place on an ungreased, parchment lined cookie sheet. Flatten with a fork.

Bake for 15 minutes at 350°F.

Cookies are done with they are light brown and a little shiny in the middle.

Let cool.

Recipe yields 2 dozen, 2 inch round.

To dress up cookies, sprinkle with colored sugar before they cool.

This recipe must use creamy peanut butter.

Excellent recipe for those who cannot have gluten.

This recipe is awesome to cover in chocolate. I just used a glass bowl over a pan with boiling water and poured chocolate chips in... adding a little vanilla (about a tsp.) and some brown sugar. After the chocolate was all mixed together I rolled the peanut butter cookie batter (that was rolled into balls) into the chocolate mix, set them on a piece of freezer paper and put them in the fridge to set up. The kids LOVED them. I called them peanut butter kisses :)

Instead of flatting with a folk put a chocolate kiss in the middle and bake for about 8 minutes. I can never make enough of these cookies, everybody loves them.

Just took these out of the oven-good flavor-I added some vanilla extract - but I wanted chewy cookies!! They got crunchy after they cooled. Next time, I'll bake for only 10 minutes.

Easy and foolproof recipe! I added dark chocolate peanut butter cups from Trader Joes and surrounded cups with dough, rolled balls in sugar and baked 17 minutes. They flattened and the cup was a magic center of goodness.

I made this recipe many times using brown sugar and crunchy peanut butter. It is easy to double the recipe using a whole jar of natural peanut butter. I use Skippy super crunch natural peanut butter and 1 1/2 cups of sugar and 2 eggs for a double batch.
