SOUTHERN CHILI 
2 lbs. hamburger
2 lg. onions, diced
4 cloves garlic, crushed
1 (16 oz.) can whole tomatoes
1/2 lb. fresh mushrooms
2 lg. green peppers, diced
2 med. stalks celery, diced
4 to 6 tbsp. hot chili powder
4 tsp. salt
2 tsp. sugar
2 tbsp. Worcestershire sauce
1 lb. uncooked red kidney beans
1 (8 oz.) can tomato paste

Soak 1 pound of red kidney beans overnight in water. Boil the beans in water and 1 tsp. of salt until beans are soft. Set them aside. Saute the celery, green peppers, onions in a large frying pan with a little cooking oil until slightly browned. Saute the hamburger meat until browned and then drain the excess oil off. Drain beans, add hamburger meat, green pepper, onions, mushrooms and celery. Stir in the tomato paste and whole tomatoes with 2 cans of water. Add sugar, salt, Worcestershire sauce and black pepper, simmer this mixture for about 1 1/4 hours adding water when chili becomes too dry. Serves 10 to 12 people.
