RECIPE COLLECTION
“SAUSAGE, EGG, HASH BROWN CASSEROLE” IS IN:

SAUSAGE, EGG, HASH BROWN
CASSEROLE
 
1 lb. sausage
9 large eggs, slightly beaten
3/4 cup milk
4 tablespoons melted butter
24 oz. pkg. hash browns
8 oz. shredded cheddar cheese

Preheat oven to 350°F.

Break up sausage meat and discard casings, if desired. Layer raw sausage on bottom of a well buttered 9"x13" pan. Add milk and melted butter to beaten eggs and pour over sausage.

Note: You may substitute 2 tablespoons of olive oil in place of 2 tablespoons of the butter with good results.

Add hash browns and top with shredded cheese.

Bake for one hour.

About 4 servings.

I have been making this for years on the stove top in a heavy skillet and it is a favorite one dish breakfast when we are camping. I use the O'Brian Potatoes with the onions and peppers and add a sprinkle of garlic powder over the potatoes. It gives it a bit of zip!

I've been making this for years too, but with some changes. I brown both the sausage and the hash browns (I grate about 3 potatoes myself), omit the melted butter, and add 1 can of chopped green chilies. I layer with the sausage on bottom, next the hash browns, then the green chilies, then the eggs & milk whisked together with salt & pepper to taste, and finally top with the cheese (lots of it). This is absolutely delicious served with biscuits and if there happen to be any leftovers, they freeze and reheat very well, although there are very seldom any leftovers!

Just made it for the first time. Definite family pleaser. One thing I would do different is add the cheese on top in the last 20 minutes instead of at the beginning. I used maple sausage this time but if I used regular or hot, I would add spices to it as well.

It was very good! I did brown the sausage beforehand, and only lightly browned the hashbrowns. I think it would have been ok without doing that, but I was worried about the grease from the sausage yucking it up. The only thing I would have done differently renee's advice and put the cheese on with 20 minutes to go (instead of at the beginning). It wasn't bad at all, but the cheese would have been a little tastier if it hadn't been cooked so much. Still, I really liked this, and it's easy, easy, easy!

Made this for second time and tweaked the recipe a little. Used hot sausage, added mince garlic, finely chopped onions, and more cheese (sharp cheddar). Plus 6 extra eggs. You can leave butter or oil out entirely as the sausage is in it. As recipe called for, I layered sausage on bottom and then layered potatoes, onions, egg mixture and cheese. Then repeated everything but sausage. Finished with healthy portion of shredded cheese. At about 45 minutes in I drained most of sausage grease. Continued baking and then just before serving, broiled on low just long enough to slightly brown top. Am in process of making second one as first was devoured by neighbors who smelled it cooking and showed up to find out what it was. Good stuff!!!

This is the second time I made this recipe and my family LOVES it! I did brown the hash browns and sausage as well as add a bit of bacon. But, GREAT recipe!

I loved the recipe! I browned the susage & hashbrowns first and got great results. I made the casserole without butter by accident...I put it in the microwave to melt it & found it in there the next day. It was delicous without the butter, I'll never add it from now on. :o)

Baking in the oven now. Browned sausage, added diced ham, onion and green pepper. Made mine more like a 'breakfast lasagna'. Sausage, hashbrowns, cheese, ham, hash browns. Then poured eggs over, and added cheese to top.

I made it the way Jackie in New Mexico describes. I don't think I would ever put raw sausage in the bottom of a casserole, sounds gross with all the grease and stuff too. I also sauteed green and red peppers and put them in the hash browns, then topped with green chili's. It smells great! 3 stars for original recipe
