Love this! I followed the recipe but brown the sausage first to remove the grease. I make two small ones, one with bacon and the other with sausage and spinach added. I never have to get up on the weekend standing in the kitchen. Mix it up the night before, get up and put it in the over with the timer and get back in the bed. When the timer goes off you can get up. Love It.

Cooking it now, smells so good, I cooked the sausage and browned the hashbrowns, will wait till the last 20 minutes to add the cheese. Made some homemade biscuits to go with it and peeled a fresh pineapple for dessert, I doubled the recipe since I have more than 4 to feed... Smells wonderful!

Tried the recipe for a tailgating party. Sent it with my husband as it was a "all guys" weekend. All the guys called me to tell me how good it was and I can do it again anytime! Did cook the sausage first, and did use the olive oil. I think it would serve more than 4 however. Will save this and try it again!

I love, love this. I brown sausage and hashbrowns first BC I'm super worried eating under cooked meat. I also have a new suggestion I saw for a similar recipe in my Kroger coupons booklet they sent me. Put this mixture in cupcake tins, and serve as bite size. I haven't yet tried it, but they looks delicious, and would be perfect for kids, or fast morning breakfast on the go. They say for bite size one you put the hash brown mixed with 2 tbsp. butter on, bottom of muffin tin, bake at 400°F, for 20 minutes until golden brown, then pour egg, veggie, cheese mixture over cooled hash browns, and bake at and additional 325°F, for 10~15 minutes until eggs are firm. It's almost exact recipe, but faster and bite size. We are a family of six, four kids and I know while my kids want something fast, and this sounds perfect. I hope it helps others.
