FRENCH ONION SOUP 
6 large brown onions
3 cloves garlic
bay leaf
thyme
beef stock
red wine

Thickly slice onion and chop garlic. Sauté in pan with a drop of olive oil, stirring occasionally until onion is caramelized. Add 2 pints of stock, one cup of red wine, two bay leaves and some thyme. Bring soup back to the boil, serve with toasted cheese croutons.

Used prepared garlic, but that is because I am old. I love to watch onions caramelize. It is like watching your life pass before your eyes. Slow but sure. I asked my wife if I should add more wine and she said no. I guess looking at the recipe that means I should not use more wine than before it thyme (time). Only used a 1/4 tsp. Also added a 1/2 tsp of red pepper flakes and s and p to taste. life is good, wife is good.
