SALMON OR TUNA QUICHE 
1 (15 1/2 oz.) can salmon -or- 1 (12 1/2 oz.) can tuna in water

Drain and reserve liquid to 1/2 cup.

3 beaten eggs
1 c. sour cream or plain yogurt
1/4 c. mayonnaise or salad dressing
1 tbsp. grated onion
1/2 c. shredded sharp cheddar cheese
1/4 tsp. dill weed
3 drops bottled hot pepper sauce

Blend eggs, yogurt, mayonnaise, and water (reserved liquid). Add tuna, cheese, onion, dill weed and hot sauce. Spoon filling into crust and sprinkle with reserved mixture from crust.

Bake at 325°F for 45 minutes or until firm in center.

QUICHE CRUST:

1 c. whole wheat flour
2/3 c. shredded sharp cheddar cheese
1/4 c. fine chopped almonds
1/2 tsp. salt
1/4 tsp. paprika

Combine above. Stir in 6 tablespoons corn oil. Set aside 1/2 cup of mixture to sprinkle on top. Press into quiche pan and bake at 400°F for 10 minutes.

I liked this recipe because it was easier to do than it read. My family simply raved about. My youngest son who hates quiche said this could change his mind. The finished product is very elegant & delicate. Only downside is you have to come up with a side vegetable.

I adeed wilted spinach and big chunky sauteed onions. Then a dadh of old bay and 1/3 less the cheese with a parm romano replacing it. oh and a dash of paprika, topped it with sliced almonds and parm!
