“NIKI'S STUFFED GREEN PEPPERS” IS IN:

NIKI'S STUFFED GREEN PEPPERS 
1 lb. ground beef
1 onion, chopped
2 cups Minute Rice
5 medium round green peppers
3 cups any kind jar spaghetti sauce
shredded mozzarella cheese

Cut off tops of green peppers and clean seeds out. Boil in large pot for 5 minutes, or until peppers are a dull green, if desired. Alternatively, the peppers may simply be brushed with olive oil for a roasted effect.

Brown beef with onion. Add uncooked rice and 2 cups of spaghetti sauce.

Fill peppers with meat/rice mixture. Pour remaining cup of spaghetti sauce over peppers. Cover with aluminum foil and bake in a preheated 375°F for 25 minutes or until peppers are tender.

Remove foil and sprinkle with grated mozzarella cheese. Bake for another 10 minutes, uncovered, or until cheese is melted and bubbly.

I agree on using ground Italian sausage (we use half ground beef & half Italian sausage). Adding Italian seasoning to your taste makes a difference as well.

Making this with brown rice, the spaghetti sauce is a much better idea than just plain tomato sauce, don't know why I never thought of this. I love this dish. I used to buy Stouffers cause I thought it was such a pain to make but it isn't really. Just waiting for the peppers to cook. I bought 4 peppers but one was shaped so funny it wouldn't hold anything so I had only only 3 and had leftover filling which is great - will use the rest tomorrow. I'm the only one in the house that likes green peppers so these babies are all mine. Also I don't have Mozzarella cheese so going to use unsmoked Provolone.

OK the dish turned out great except the peppers needed to bake longer. I did not precook them in water as suggested, so at 375°F for 25 minutes is not long enough if baking the peppers raw. The provolone was great. I used Hunts mushroom spaghetti sauce, one of my favourites. I think next time I will add mushrooms sauteed in butter. All in all a very good recipe, I think would make six peppers though the way I made it because I cooked 1 cup of brown rice with the hamburger and 2 cups water and made 3 for myself then had enough left for another 3.
