“STUFFED GREEN PEPPER SOUP” IS IN:
NEXT RECIPE:  STUFFED PEPPER SOUP

STUFFED GREEN PEPPER SOUP 
1 lb. ground beef
1 env. dry onion soup mix (Lipton)
1 (15 oz.) diced tomatoes
1 (15 oz.) tomato sauce
1 cup cooked white rice
2 large green bell peppers, chopped
1 beef bouillon cube
1/8 cup packed brown sugar
2 tablespoons apple cider vinegar
1 1/4 cups water
Mozzarella cheese for finishing (optional)

In a large pot, brown beef thoroughly. Drain grease and return to pot. Stir in dry soup mix and heat thoroughly.

Add remaining ingredients (except rice) and bring to a boil. Reduce heat and simmer for 30 to 40 minutes or until peppers are soft. Add rice and heat through.

Scoop into bowls and sprinkle with Mozzarella cheese, if desired.

Makes 5 servings.

This recipe is great! When I first tried it, I added a half cup of uncooked rice to liquids and let it simmer slow for about a half hour, then added the peppers. Amazing! My husband loved it. The next time I'm going to try it with sliced cabbage instead of peppers. Thanks cooks.com!!!

This recipe is awesome. First time I made this. I did add fresh chopped onion to the ground beef while it was browning. This also has a slight taste of french onion soup also. The best of both worlds. Easy and fast. Tastes great.

I just made this for dinner. I used 99% fat free ground turkey instead of the beef and left the cheese off. Otherwise, no changes. It tastes WONDERFUL. And I calculated that with my modification is is about 220 cal and 1 gm fat per serving (at 6 servings instead of 5). Just wonderful if you love stuffed peppers and so much easier! Also, I just let the rice cook in the soup...read the directions on the rice package to you know at what point to add it to the simmering soup and how much to add to equal one cup when it is done cooking.

This is so much better than regular stuffed peppers because the flavors get to meld together. Everyone raves for this soup! The only variation I make is I use fresh chopped onions instead of the onion soup mix because my husband can't have the dehydrated onions. I double the recipe every time I make it because everyone wants it the next day. SOOOOOOOO GOOOOOOOOD!!!

The soup is a favorite at our house, I have to make a double batch. Onion always makes everything it touches even better, so I add a large onion to the soup. I hate stuffed peppers but love the soup!!

This soup is delicious! I added an onion to the hamburger while it was browning, and I used beef broth as it's what I had on hand. I also added my uncooked brown rice while the soup was simmering for the 30-40 minutes. I didn't have any vinegar on hand, so I omitted that. Really, I don't think you can wrong with this no matter how you change it up!

This was a very yummy recipe. I actually used 2 lbs ground chuck, and 28oz cans of the chopped tomatoes and sauce and increased the bouillon as well & 1/4 cup brown sugar. I used one large red pepper and one green pepper and 2 cups water. I got wonderful reviews from staff at work when I shared it from them. Great on a cold winter's day.

I've used this recipe for two years now. I double the recipe and replace diced tomatoes in season with 4 homegrown (doubled amount) tomatoes. Much better than canned diced! I too won't need to make stuffed peppers ever again cuz hubby loves this. Have served to company and they raved!

Easy to put together, just make sure you have ingredients on hand and prepared and all you do is follow the recipe and add as it tells you to, and I can not wait for supper, takes longer to prepare then to cook and my feelings are, you will love it... THANK-YOU VERY MUCH!
