HAMBURGER CASSEROLE 
1 lb. hamburger
2-3 large cans of whole tomatoes
3-4 onions
4-5 potatoes

Pack hamburger on bottom of casserole dish or pot. Slice onions and put the rings around. Slice potatoes like you would for scalloped potatoes and add on top of onions.

Then add tomatoes, crush with your hands along with the juice add a can of water to this. Do this to the top of your pot or casserole dish and add salt and pepper as you go.

Bake at 350°F until potatoes are done and serve. DO NOT COVER

I make the same recipe but instead of tomatoes I use ketchup and I cover until the potatoes are almost done then let brown on top.

Our Mom called this Poor Man's Stew, raised in MI during the depression so likely served quite a bit during that time period. SO GLAD I found this recipe coz it's one she was likely too embarrassed to put on paper? Thank you for this trip down memory lane, cannot wait to make it myself.

I used to make this recipe when my children were growing up. It was one of our favorites. Instead of tomatoes I used 1 can of Campbell's golden mushroom soup plus 1/2 can of water. Wisk together & pour over casserole. Delicious. Also, because the potatoes took so long to get done, I started par-boiling the potatoes then adding them to the casserole before baking. Never had undone potatoes again.

Just wanted to comment on Judith's recipe with the mushroom soup instead of tomatoes. Tried it for the 1st time, family loved it and they had 2nds. Boiled the potatoes like Judith said. Next time I'll try it with tomatoes.

My Ma used to make this ALL the time growing up... with slight differences.

Pack hamburg on the bottom of pan
Slice NON-PEELED potatoes and layer on top
Layer on top of potatoes 1 can whole green beans
Top with 10 oz. can of cream of mushroom soup

Within the last 10 min add shredded cheddar cheese and french-fried onions.

Best meal for winter!!

The recipe was very easy to make and the ingredients are pretty cheap. We needed to make something before our grocery run tomorrow with not much left in the cupboard and this did the trick. I used 2lbs of hamburger, one can of golden mushroom, one can of cream of mushroom (didn't have another can of golden), and added a can of water. I also boiled the potatoes as suggested. Took an hour to bake at 350°F. I suggest heavily seasoning the hamburger as I lightly seasoned it and the taste was somewhat bland.

I make this recipe instead I pack ground beef in pan, layer it with french style cut green beans then layer that with carrots topped with mounds of cheese then last n final layer mashed potatoes... with a little salt 'n pepper to top it off... very great recipe.

I am going to try this recipe - but shred the potatoes on a box grater - the same way you shred cabbage for making cole slaw... then add shredded cheese last 10 minutes as another did. The recipe sounds like a real keeper and can be adapted easily. Thanks for sharing.

This needed greens. Added dried parsley from our garden. And sprinkled cheese on top. Right out of the oven so it melted on top.
