MEXICAN HAMBURGER CASSEROLE
(QUICK)
 
2-3 lbs Ground Chuck
6 servings of instant mashed potatoes (cooked)
1 can of whole kernel corn
1 can of pinto beans
1 medium sweet onion
1 medium bell pepper
1 pk of taco seasoning mix
2 cups (approx) shredded cheddar cheese
2 tsps butter
Salt
Pepper

Brown ground chuck in skillet. Thoroughly drain grease. Return to skillet & heat, add taco seasoning mix and 1/4 cup of water. Stir and cook to reduce water, thickening mixture. Sauté sweet yellow onion and bell pepper (chopped to your liking) in 2 teaspoons of butter until onions are almost clear and peppers are softened.

Spread meat in a 9x13-inch casserole dish.

Prepare mashed potatoes according to directions. Spread corn, sauteed onions, bell peppers and pinto beans over meat mixture then cover with mashed potatoes. Generously sprinkle with shredded cheese.

Bake at 350° for approximately 30 minutes or until cheese is bubbling and center of casserole is hot and steaming in the center.

Makes approx 6 servings, possibly more.

Let it rest 10-15 mins, salt & pepper to your liking & enjoy! This is a family favorite! I have a husband and 2 grown boys to feed so this always comes in handy. 😉
