“NIKI'S STUFFED GREEN PEPPERS” IS IN:

NIKI'S STUFFED GREEN PEPPERS 
1 lb. ground beef
1 onion, chopped
2 cups Minute Rice
5 medium round green peppers
3 cups any kind jar spaghetti sauce
shredded mozzarella cheese

Cut off tops of green peppers and clean seeds out. Boil in large pot for 5 minutes, or until peppers are a dull green, if desired. Alternatively, the peppers may simply be brushed with olive oil for a roasted effect.

Brown beef with onion. Add uncooked rice and 2 cups of spaghetti sauce.

Fill peppers with meat/rice mixture. Pour remaining cup of spaghetti sauce over peppers. Cover with aluminum foil and bake in a preheated 375°F for 25 minutes or until peppers are tender.

Remove foil and sprinkle with grated mozzarella cheese. Bake for another 10 minutes, uncovered, or until cheese is melted and bubbly.

Yay! This is my Mother-in-Laws recipe almost exactly. Thank you for posting it. Just a hint too. the filling that this makes my Mother-in-law also makes a dish she calls "Spanish rice" it's literally this stuffing with the bell pepper cut up into it. Either way it is delicious! Thanks again!

Super easy recipe! I boiled the peppers first and added spicy red pepper spaghetti sauce and spicy marinara for the top, came out delicious!! Next time I will use hot Jimmy Dean sausage or that and a ground beef combo. Made this for my man and his boss and they loved it!! Thank you for a yummy easy fast dish!! :)

This is my all time favorite recipe! My 2 year old and husband and I eat these right up and we have leftovers for the next day! I'm thinking of adding in Quinoa in place of the rice the next time i make it.

For a variation try using poblano peppers and replacing the ground beef with a can of black beans or whatever beans you like, and the spaghetti sauce with a chunky salsa.

I had messed up a previous chiles releno recipe and was looking for a save, found this, improvised and made a pretty good save. Since then I have made it this way too. Both are great!

This was a very easy recipe to follow. This was my first time making stuffed peppers and it won't be my last either. My boyfriend and I like a little more spice, so we are gonna try to use a different sauce next time. But I will certainly follow the core of this recipe each time. The reviews really helped as well...thanks for everyone's help.

This is exactly how I have fixed stuffed peppers for years.
To change up ~ I have subbed the spaghetti sauce in the meat itself - with "General Tso's stir fry sauce - chili sauce - even barbecue sauce. Use regular spaghetti sauce at end to pour over. This recipe is fantastic and can be changed up so easy, depending on what your taste is for the day and what you have on hand. I do break this down for one or two servings also.
