PRIME RIB & STEAK SEASONING
MARINADE
 
Prime Rib Seasoning:

1/4 cup black (coarse) ground pepper
1/4 cup salt
1/4 cup garlic powder
2 tbsp. paprika
1/4 cup onion powder
2 tbsp. MSG (Accent) meat tenderizer (optional)
2 tbsp. seasoning salt
1 tbsp. celery salt

Combine ingredients.

Rub 1/2 cup of seasoning per 10 lbs. meat. Rub and massage seasoning in with soy sauce after all wet, work the seasoning in very well! Keep adding more seasoning until you have the amount needed. Place in refrigerator and let seasoning soak into meat for 24 hours before cooking.

Make 1" thick slices in a large onion (more if needed) to line down center of a pan which is large enough to fit your piece of prime rib on. Use onion slices to make a bed to place meat on top of.

Cook 350° for about 2 hrs or more, depending on the weight size of the prime rib.

Use a meat thermometer:

Rare: 120°F - Med: 140°F - Well: 160°F

Note: Once you make a prime rib with this seasoning you will be told it is the best prime rib they ever tasted - I guarantee it! This recipe is outstanding. I make a shaker of this and keep it on the back of my stove and use it on all my steaks (also with soy sauce) an hour before cooking.

I used this recipe for a steak cook out here in Iraq and i won second place. the judges said the steak was number one but it was the way i presented myself in front of the judges and didnt reveal my recipe i took number two. Thanks for an awesome steak!

Can't wait to try it on my prime rib roast on Sunday for my sister's birthday! Just rubbed it down and it's marinating. Smelled amazing before I wrapped it back up! So I first tried this as is without the MSG. Then I tried adding ground coriander, dried lemon zest, and replaced the seasoning salt with beef seasoning (Which is more or less the same thing). Let me tell you the difference is phenomenal. I used this on some burgers last night and was told that they were the best ones I've made yet. This is a great overall seasoning for beef. Fantastic job coming up with this.

This actually the recipe I use with 3 minor differences, the rub, I do NOT use MSG, but do use a little bit of bromelain, also on the rub I add 2 tbsp. curry powder (I use curry powder on almost everything). And I cook at 450°F for 15 minutes, then turn down to 300°F, and use meat thermometer to achieve desired doneness.

First I tried it on some New York Strip Steaks, and they turned out with amazing flavor. Then I cooked a 22 pound Prime Rib for Family and Friends. It was hands down the best Prime Rib I or any of the others had ever had in our lives. I did deviate from the recipe just a tad and used a combination of Worcestershire and Soy Sauces to wet the surface, and used large crystal sea salt in the dry rub. Absolutely amazing !!!

The spicing and prep produce a great tasting roast.
Cook time is too long for a small roast. Use 20 minutes/pound rule. Turn off the oven and let it sit 20 more.

Going to try this on a recipe for "Steak bites" - using a NY Strip. HAS to be excellent. Am thinking since the steaks will be cut into bite size pieces - before cooking - this will definitely put the flavor in every single bite. Can hardly wait.
