AUNT JUDY'S CARAMEL CORN 
6 quarts popcorn, popped
2 cups brown sugar, lightly packed
1/2 cup white corn syrup (Karo)
1 cup (2 sticks) butter
1 tsp. vanilla
1 tsp. salt
1 tsp. baking soda

Place popcorn in large roasting pan; set aside.

In medium saucepan combine brown sugar, white corn syrup and butter. Stir constantly over medium heat until mixture boils; boil 5 minutes and remove from heat.

Add vanilla, baking soda and salt; stir until blended. Pour over popcorn, mixing well.

Place roasting pan in oven in slow (250°F) oven for 40 minutes, stirring occasionally.

Spread caramel corn on a sheet of wax paper and allow to cool.

Makes about 10 servings.
