CROCK POT CORN PUDDING 
1 can cream style corn
1 can whole kernel corn
8 oz. sour cream
1 stick butter, melted
2 eggs, beaten
1 box Jiffy corn meal mix

Spray pot with non-stick spray. Combine all ingredients in a large bowl. Pour in crock pot. Cook on low for 6 to 8 hours. You can cook on high 4 hours, it gives you a crisp ring around outside. Excellent to take to covered dish affairs. Serves 8.

I made this today for a potluck and doubled the recipe. Afterwards i had people hunting me down to tell me how good it was. Best thing was that it was easy. I threw it all in the crockpot, stirred and walked away. So delicious!!

Love this recipe. Very easy, and rich. I have seen people complain that it turned out mushy. My advice is to place a dinner knife under the rim of the crockpot lid. It vents it just enough that the steam escapes and the crust stays crusty.

Terrific recipe! This was a sure hit at every potluck I've brought it to. Much like a souffle in texture but so simple to make. For work potlucks I mix it up in the morning, cook on high for 3 hours at work and then it's ready to serve for noon luncheons. Always goes fast and people ask for the recipe. For zing, try adding canned regular or smoked oysters and some Tabasco. Also, I add a teaspoon of sugar or sweetener. By the way, don't drain the canned corn or if using frozen corn, add some milk for moisture.

Made this as a side dish for a large gathering. I doubled the recipe, put it in a crock pot on high for 4 hours. Perfect, not over or underdone. It was a hit. The secret for me is the Jiffy corn muffin mix.

I have made this recipe for about 10 years. It deserves another review. This is a crowd-pleaser. I was charged with bringing scalloped corn and couldn't find my grandma's recipe.
