TRADITIONAL IRISH COTTAGE PIE 
2 pie crusts (I use Pillsbury)
1 lb. ground beef
4 large potatoes
1 medium onion, chopped
1/2 cup carrots
1/2 cup green beans
1/2 cup whole kernel corn
1/2 cup peas
2 cups shredded cheese
1/4 cup milk
2 tbsp. butter

Preheat oven to 350°F.

Bring potatoes to a boil and cook for 15 minutes. Drain and mash with butter and milk until fairly smooth.

While potatoes are cooking, crumble ground beef into a large skillet over medium high heat. Add chopped onion. Cook and stir until beef is browned, drain excess fat.

Place beef and onion mixture into a large bowl, add all vegetables and cheese. Mix.

Place bottom pie crust in a 9-inch pie pan and bake till light brown. Remove from oven. Place the beef mixture into the bottom. Spread mashed potatoes to cover the top. Form a mound. Place second pie crust over mashed potatoes and tuck in around mixture.

Bake in 350°F oven for 30 to 40 minutes or until the pie crust is golden brown.

Variation: Stir in a can of cream of mushroom soup with the vegetables and cheese.
