ARMENIAN DOLMADES
2 lb. ground beef (lean)
1 cup raw rice (or par-cooked)
2 medium yellow onions, chopped fine
1 cup parsley, chopped
2 tbsp. olive oil
1 (15 oz. ea.) cans consomme (chicken broth)
1 (8 oz.) can tomato sauce
2 tsp. lemon juice (plus lemons for serving)
garlic salt, to taste (or regular sea salt if desirable)
2 (16 oz. ea.) jars grape leaves

Mix above ingredients (except grape leaves, consomme, and tomato sauce).

Rinse grape leaves under cold running water and drain.

Roll small amount of mixture in grape leaves and arrange in a pot that has been lined on the bottom with a few grape leaves (larger leaves - 3 or 4).

Arrange dolmades in pot.

Add tomato sauce and consomme.

Place heavy item, such as a plate, over top of dolmades.

Bring to a boil. Lower heat and cook for 1 hour, (until meat and rice are cooked).

Remove from heat. Serve.

Serve with a wedge of lemon. Enjoy!
