KURABIA (ARMENIAN BUTTER COOKIE) 
1/2 lb. butter
1 c. sugar
1 tsp. vanilla
2 c. flour

Cream butter, add sugar and vanilla. Gradually add flour until mixture is pliable. Roll into balls.

Bake in 300°F oven for 20 minutes. Remove from cookie sheet and roll in powdered sugar. Cool.

Hi Nathalie,

It sounds like either your oven is off temperature (too cool) or you didn't preheat it for 15 minutes before baking to bring it up to temperature. Try using an oven thermometer. The oven needs to be hot enough to set the cookies before they have a chance to spread.

Nathalie, your cookies came out flat because you were supposed to knead the dough (3-4 min) (like you would bread) until all the granulated sugar breaks & becomes less grainy to disintegrate, and in the end is more delicate & melt in your mouth. The dough should be sticky when you roll it into 1 big ball. Refrigerate for about 15 min, then take a handful of dough & roll into a rope with palm of hand on cutting board until it is the diameter of a nickel.

Cut into 2x 2/1 in, pieces on the diagonal & bake on ungreased cookie sheet. Leave room between the cookies as they will expand while baking.

Bake in preheated 325°F oven for about 15 min. Remove the cookies from oven, but leave them on the cookie sheet to cool. DO NOT REMOVE from cookies sheet until they are absolutely cool. Can be stored in Freezer.

I've been making these cookies for years. You have to chill them first before you cook them or they will go flat. And you cannot put them on a hot cookie sheet.
