PEANUT BUTTER COOKIES 
1 1/4 c. sifted all-purpose flour
3/4 tsp. baking soda
1/2 tsp. baking powder
1/4 tsp. salt
1/2 c. soft butter
1/2 c. chunk style or creamy style peanut butter
1/2 c. granulated sugar
1/2 c. light brown sugar, firmly packed
1 egg

Preheat oven to 350°F.

Sift flour with baking soda, baking powder and salt. Set aside. In large bowl, beat butter with peanut butter. Add the sugars gradually; beat until light and fluffy. Beat in egg. Add flour mixture; beat at low speed until well combined. Refrigerate dough, covered until chilled about 1 hour.

With teaspoon, shape dough into balls about 3/4 inch in diameter. Place 2 inches apart, on ungreased cookie sheets. Flatten with fork, making criss cross pattern. Bake 6 minutes or until lightly browned. Let stand a few minutes; then remove to wire rack to cool.

Makes about 5 dozen.
