HOMEMADE PIMENTO CHEESE 
2 c. (8 oz.) grated sharp Cheddar cheese, softened
8 oz. cream cheese, softened
1/4 to 1/2 c. mayonnaise
Dash garlic powder
4 oz. jar diced pimento, drained

Combine cheese in large mixing bowl, beat at medium speed of electric mixer until light and fluffy. Add mayonnaise and garlic powder, mix well. Stir in pimento. Makes about 3 cups.

Easy and quick, I make this for the menfolk's lunches and they love it! MUCH better than anything you can buy in the store. I add just a pinch more garlic, though. You can never have too much garlic, in my opinion.
